Spring Run Batch #3 from Wolves Whiskey brings three components together at 105 proof (52.5% ABV). The base is a whiskey distilled from stout beer and matured in ex-Chardonnay French oak sourced from Demptos, joined by a 7-year-old Pilsner whiskey and a 7-year-old low-rye whiskey, both aged in American oak. Pilsner makes up 59% of this blend, the highest proportion used in the series so far.
The aroma opens on green apple and honey, with lemon, black cherry and dark chocolate through the glass. On the palate, hops and molasses take over before the spice builds on a medium-warm finish. Each 750 ml bottle is wrapped by hand in Bermuda Green sheepskin in Los Angeles, part of this limited release.
