Description

The name Volcán de mi Tierra comes from El Volcán de Tequila, an actual volcano rising from the lowlands of Jalisco, Mexico. Its eruption some 200,000 years ago reshaped the surrounding landscape and left behind mineral-rich volcanic soil, conditions that suit blue agave especially well. Two different production paths come together here. Lowlands agave is baked in brick stone ovens, milled by a stone tahona wheel, fermented in open wooden tanks using champagne and natural yeasts, then double distilled in pot stills. Highlands agave goes into an autoclave pressure oven, passes through a multi-stage mill, ferments in stainless steel tanks with rum yeasts, and is likewise double distilled in pot stills.

This Cristalino Añejo is bottled at 40% ABV in a 750 ml format. The result is a balanced pour with a smooth texture and subtle notes that speak to the way it was made, carrying the herbal, citrus and peppery character of the lowlands alongside fruitier cherry and pear tones from the highlands. Sweet agave leads, with delicate grapefruit and a touch of black pepper spice through the finish.
