Distillation for this Highland single malt began on November 20, 1991, followed by three decades of maturation. The spirit spent its early years in American white oak ex-bourbon barrels, then moved into an unusual pairing of Colheita and hand-selected Tawny Port casks sourced from Graham's Port. A final two-year period in Port pipes that had previously held Graham's 1982 Single Harvest Port completed the 30 year journey before bottling at 43.8% ABV in a 750 ml bottle.
The result is a whisky shaped as much by wood as by time. Manuka honey and dark berry fruits open the glass, giving way to plum, cacao, and cherry on the palate, while the finish turns toward blood orange, ginger cake, liquorice, and sugared almonds.
