Three years is the outer limit of this Añejo's maturation, and it spends that time in smaller oak barrels, where the ratio of liquid to wood makes for close contact and a slow build of character. Blue agave from Jalisco's sun-drenched fields supplies the base: mature piñas slow-cooked in traditional stone ovens, then distilled by master craftsmen before the spirit goes into premium oak. The barrels do the rest, month by month, until the people watching over them judge it ready.

What comes out of the wood is golden-brown and deep, with the raw edge of the agave rounded off into something warmer. Caramel, vanilla and chocolate sit alongside spice, dried fruit and a touch of leather, carried on a silky, velvety mouthfeel. Bottled at 40% ABV in a 700 ml format, it is best taken neat in a proper tasting glass, where the full range of its aromas and flavors has room to show.
