Maturation takes place in a combination of American oak casks and Spanish sherry barrels, with a further period in Oloroso sherry barrels that deepens the sherried character associated with Redbreast.
The nose is very rich in fruit, showing the dried fruits typical of the Redbreast style alongside black cherry, red berries and a touch of citrus from the Oloroso influence. Vanilla sweetness carries the mixed fruit across the palate while pot still and wood spices build into a complex, well-balanced finish.
