After its initial maturation, the whiskey is finished in bespoke charred barrels coopered with grooved staves. The grooves increase the surface area inside the barrel, giving the bourbon more contact with the charred oak during its finishing period.

Jefferson's Bourbon was founded in 1997 by Trey Zoeller and his father Chet, a bourbon historian, continuing a family whiskey tradition traced to Trey's 8th generation grandmother, who was arrested in 1799 for the production and sale of spirituous liquors. The brand pairs traditional whiskey-making methods with an experimental approach, best known for its daring aging techniques.
