Made in Oaxaca from 100% Espadin agave, this joven mezcal comes from hand-selected plants grown on the hillsides surrounding a small village. The agave is roasted in an earth oven built with volcanic stone and firewood, the traditional artisanal method that gives the spirit its restrained, smooth smoke. Bottled at 42% ABV in a 375 ml format.
The palate moves through crisp apple and even-handed agave, then picks up faint wood from the fermentation barrels alongside mango and local zapote fruit. Smoke and earth carry through with roasted agave, citrus zest, and a touch of minerality and pepper closing things out. Rich but unhurried, it works neat or as the backbone of a considered cocktail.
