Time is central to the house equation. Each vintage matures actively in the bottle on the lees, undergoing a slow metamorphosis in the darkness of the cellars toward three successive Plenitudes, each a window for expression. After at least eight years of maturation, Dom Perignon Vintage reaches the First Plenitude, that of harmony, with everything in place and held in a precise, accomplished balance.
The 2010 season began with low temperatures, in contrast to the rest of the decade, followed by a hot summer with little rainfall. In mid-August two months' worth of rain fell in two days; the heat and water brought generous ripening but demanded drastic sorting of the grapes.
