This one is pretty special, oloroso sherry is the first barrel finish expression we started with at Doc Swinson's. That's right, the one that started it all! We found this to be one of our favorite finishes, as it plays exceptionally well with our base whiskey, Doc thirty-six twenty-one blenders cut bourbon. We find that oloroso sherry adds significant complexity & mouth feel while layering in notes of roasted nuts, spices & orange peel.
Doc Swinsons works in small batches, building rums around traditional maturation practices such as solera systems and selected cask aging. Its limited releases are made to show how much complexity rum can hold.
