Del Maguey Wild Papalome is a single-village mezcal made from Papalome, a wild agave varietal that grows abundantly in the remote Mixteca Alta region of Oaxaca. Papalome is Nahuatl for butterfly, and it is the maguey of choice in that part of the state. The bottling is 750 ml at 45% ABV, 90 proof.
It is produced by palenquero Fernando Caballero Cruz and distilled in the traditional style of the village of San Pedro, in a stainless steel pot with a clay condenser and bamboo tubing.
The profile is earthy, dark and smoky, with herbaceous character and notes of leather, slate, black olive and meatiness. The finish is medium-long, carrying dried black cherries, earth and savory mushroom. This is a mezcal to be savored slowly rather than shot.
