Description
Creyente Azul Añejo is a cristalino añejo mezcal made in Oaxaca, Mexico, from Espadín and Cuishe agaves grown in the Valles Centrales and Sierra Sur regions. The agaves are handpicked at peak maturity, cooked in underground pit ovens, and crushed with a tahona stone wheel before fermentation and double distillation in small copper pot stills.
Aging takes place in new American oak casks, after which the mezcal passes through a proprietary filtration process that leaves it clear and smooth. In the glass it is colorless with silver reflections. The aroma opens with herbal and floral notes, a subtle smokiness and woodiness, and a touch of petrichor, with cooked agave, vanilla, and fresh guava behind them.
The palate is velvety, with a gentle sweetness that sits alongside the wood notes and a balance of fruit and smoke. Vanilla and a hint of star anise carry into the finish, where wood and earth notes linger. Bottled at 750 ml, 40% ABV. The producer suggests serving it on the rocks.
