Produced by a fourth-generation family of Mezcaleros, piñas are heated 4-6 days in six-ton, volcanic rock-lined earthen pits and cooled for 24 hours prior to crushing. Tahona wheels, pulled by horses, demolish the agave one ton at a time, and fermentation occurs between 2-8 days before double-distillation in copper pot stills. On the palate, Casamigos reveals fragrant herbal and fruit tones, a light smokiness, and a black pepper nuance on the long, silky finish.
