Bushmills The Rare Casks Single Malt Irish Whiskey, Limited Release No.2 Pedro Ximenez Cask, 29 Year is the second bottling in the distillery's Rare Cask program, continuing the Bushmills "pure malt" line. Unpeated and triple-distilled from 100% malted barley, it was distilled in 1992 and bottled at 53% ABV in a 750 ml format.
This is a three-wood whiskey. It spent its first 12 years in first-fill Oloroso sherry casks and bourbon barrels, then married and finished across a final 17 years in Pedro Ximenez sherry casks, giving a sweet, rich profile.
The color is golden honey. The aroma is intense and explosive, with freshly roasted cashews and hazelnuts alongside juicy figs, dates and dried apricots. On the palate, freshly baked sourdough bread mixes with stewed grapefruit, aged balsamic and orange marmalade, soft in texture with excellent length. The finish is long and complex, carrying a subtle cedar note, fresh vanilla bean and bitter cocoa, with well-integrated, balanced oak.
