Named for the centzon-totochtin "400 rabbits," the Nahuatl name given to the gods of agave drinks, this Oaxacan mezcal draws on a Mesoamerican tradition in which priests alone drank agave beverages ritually to open a channel to the divine. That spirit of the 400 rabbits is said to live on in every bottle.
Clear in the glass with bright silver hues, it opens with citrus and orange blossom before mesquite and softer fruit notes appear. The palate balances citrus and herbal tones with green fruit and smoke from the cooked agave, closing soft and complex with a trace of smoke.
